Chef Mara Vale / one table
Fire, salt
& time.
There is one table at NOCTIS. Dinner begins as the sun leaves the water and follows the slow arc of the night.

A menu written each morning by weather and tide.
Chef Mara Vale cooks with the immediate landscape: Atlantic fish, cliff herbs, seaweed, smoke and vegetables from small farms just inland. Technique supports the ingredient, never the other way around.

The table opens at sunset. Courses arrive without a printed sequence, moving from raw and mineral flavours toward fire, depth and sweetness.
House guests are always invited. A limited number of tables are held each evening for visitors by request.
